Treva's Caesar Salad: More Than Just a Recipe
Now, back to the salad. Treva's Caesar dressing isn't just a recipe, it's a testament to her passion for fresh, simple ingredients and her belief that the best food is made with love. This dressing is a staple at Gamberetti's, but Treva's sharing a slightly more garlicky version – her personal favorite!

Treva's Garlic-Lover's Caesar Dressing
Yields: 12 side salads or 4 entrée salads
Pairs well with:Â Bloody Mary or Treva's fav, a classic Canadian Bloody Caesar
Ingredients (to taste, but here's a baseline):
4 heads romaine lettuce
5 eggs (4 yolks, 1 whole)
5 garlic cloves (or more, if you're like Treva!)
7 anchovies
1/2 large lemon, juiced
10 dashes Worcestershire sauce
3 tbsp Dijon mustard
1/4 cup grated Parmesan
1/8 cup olive oil
Salt & freshly ground black pepper to taste
Croutons
Shaved parmesan
Instructions:
In a food processor/blender, combine eggs, garlic, and anchovies. Blitz!
Add lemon juice, Worcestershire, and Dijon. Blitz again.
Add Parmesan. While blending, slowly drizzle in olive oil until desired consistency.
Taste, taste, taste! Adjust with salt, pepper, or more oil as needed.
